No Bake Coconut Balls

Quick and easy to make, these deliciously sweet homemade no-bake coconut balls have only four ingredients and are a little healthier than your average coconut ball recipe.

Ingredients

  • 1 cup almond flour
  • ¼ cup coconut milk
  • ¾ cup maple syrup
  • 3 cups desiccated coconut

Instructions

  • Add all ingredients to a food processor or mixing bowl to mix by hand. Reserve ½ cup of coconut for rolling the balls.
  • Pulse or mix ingredients until you have a well-combined dough.
  • Roll the dough into balls.
  • Roll each of the balls into the dry shredded coconut coating the entire ball.
  • Refrigerate the balls for half an hour to let them set.

Recipe Variations and Substitutions
  • Add a Hazelnut: To recreate the authentic Ferrero Raffaello Coconut Balls, pop a hazelnut in the center of each ball when you roll it.
  • Coat with Chocolate: Add a drizzle of melted white chocolate for an extra luxe coating.
  • Keto: Switch to Keto Maple syrup to make these low-carb and keto-friendly.

Recipe Tip

  • Consistency: If your mix is too wet, add a little more almond flour or coconut. If it is too dry, add a bit more coconut milk. You will know how it feels after rolling a few balls.
  • Storage: You can keep coconut balls in an airtight container in a cool place, but they are better when stored in the fridge. They will keep in the fridge for up to a week.
  • Freezing: You can freeze these coconut balls. To prevent them from sticking together, flash freeze them first on a tray in a single layer. Then, keep them in a container or zip-lock bag for up to 3 months.
