Prosciutto Wrapped Figs with Goats Cheese and Arugula

Salty prosciutto, sweet figs, creamy goat cheese, and some added crunch with fresh arugula leaves – these prosciutto rolls are simple, yet elegant picnic finger food.

Ingredients

  • 12 slices prosciutto not too thin
  • 6-8 large fresh figs 10-12 if small
  • 1 roll goats cheese approx. 4 ounces you can use spreadable goats cheese
  • 1-2 cups arugula leaves

Instructions

  • Carefully separate a slice of prosciutto, be careful not to tear it, and lay it flat on a cutting board.
  • Cut a fig into quarters lengthwise.
  • Cut slices of goat cheese and place them at the top of the prosciutto slice, covering the full width of the prosciutto. If using spreadable cheese, carefully spread along the entire length of the prosciutto slice.
  • Place 2 fig quarters on top of the cheese (4 if using small figs).
  • Lay arugula leaves in front of the figs and cheese, leaving some tips to overhang the edge.
  • Carefully roll the prosciutto tightly without squeezing the ingredients or tearing the ham.
  • Repeat until you have rolled all the prosciutto slices.
  • You can serve immediately, but a little time in the fridge before serving will allow them to set a bit.

Notes

Recipe Variations and Substitutions
  • Figs: If figs are not in season, you could use slices of dried figs or rehydrated dried figs. You can also use a jar of fig preserves, but look for a quality preserve or spread so it is not too sweet or jammy. 
  • Goat Cheese: You can substitute rolled goat's cheese with spreadable goat's cheese. If you don't like or can't find goat cheese, you could use cream cheese or another soft, spreadable cheese that complements the sweet figs and salty prosciutto.
Tips
  • It will be easier to slice and roll the goat cheese if it is still cold from the fridge. If using spreadable goat cheese, room temperature is best. 
  • You can serve these prosciutto rolls immediately, but a little time in the fridge before serving will allow them to set a little and hold together better.
