Fig, Goats Cheese & Prosciutto Baguette Sandwich

This simple yet sophisticated picnic sandwich packs a punch with just a few ingredients: bold goat cheese, flavorful prosciutto, and sweet fresh figs. It's an incredibly tasty prosciutto baguette perfect for any picnic.

Ingredients

  • 2 small or 1 large crusty baguette
  • 3 slices prosciutto
  • 3-4 large fresh figs sliced - not too thin. see notes for alternatives
  • 7 oz Semi or soft goats cheese. This recipe uses the French style Chevre goats cheese roll. You can also use spreadable.
  • Butter Optional
  • red onion sliced - optional

Instructions

  • Cut the baguette longways. Optional - butter the inside of the baguette.
  • Layer the prosciutto loosely in folds along the bottom half of the baguette. For a large baguette, approximately 4-5 slices. For a small baguette, 2-3 slices.
  • Layer with the slices of figs and cheese alternating them down the length of the sandwich. If using a spreadable cheese either dollop it on top of figs or spread along the underside of the top half of the baguette.
  • If adding red onion, layer on top of the figs and cheese.
  • Close the sandwich and wrap
  • If making one large baguette, wrap it in paper. Tie sections with string and cut into portions. If making two small baguettes, wrap them tightly in paper and tie them with a string or eco-reusable sandwich wrap.

Notes

Recipe Variations and Substitutions
  • Figs: If you don't have fresh figs, use a quality fig chutney or fig spread instead.
  • Goat Cheese: I like to use soft goat cheese in a block or roll like the French-style Chevre goat cheese. You can also use spreadable goat cheese. Dollop it on the figs rather than spread it on the bread, as this will add to the taste and texture of the sandwich. 
  • Optional Additions: If you want to add anything to this sandwich, I recommend thinly sliced red onion and/or some greens such as baby spinach or arugula. This sandwich has such bold flavors that it doesn't need too much more.
