Mushroom Quesadillas

Ingredients

– 8 tortillas – 2 medium-size avocados – 1 lb white button mushrooms  – 1 red bell pepper diced – 1 large red onion diced – 2 garlic cloves minced – 2 tablespoons olive oil – ½ teaspoon salt – 2 cups mozzarella cheese

Sauté diced onion and red bell pepper in a pan with olive oil and season with salt. 

Step 1

Add the garlic and stir until fragrant. 

Step 2

Add sliced mushrooms to the pan. 

Step 3

Sauté until the mushrooms are soft and juicy. 

Step 4

Take one tortilla – cover ½ with mozzarella and spread ½ with mashed avocado.

Step 5

Spoon the mushroom mix on the mozzarella side. Fold the quesadilla in half, leaving the cheesy side on the bottom.

Step 6

Heat a skillet with butter or oil and toast the quesadilla. First, cheesy side down to melt the cheese. Then flip it to the other side to warm it.

Step 7

Serve Warm with any or all of these Optional Add Ons

– Fresh cilantro or parsley – Sour cream or ranch sauce – Chipotle or tabasco sauce – Chilli flakes – Limes – Jalapeño
