Mediterranean Couscous Salad with Tofu

– 1 cup dry couscous – 1 cup water – 12 oz firm tofu – 2 cups cherry tomatoes – 1 cucumber – ½ cup fresh herbs like:      mint, basil, parsley, or dill – Juice of 2 lemons – 2 tbsp olive oil – Salt and pepper to taste

- Add couscous to a pot of boiling water.  -Stir and remove from heat.  - Leave covered for 5 minutes to steam.  - Fluff with a fork and set aside.

Chop tomatoes and cucumber

Cook tofu cubes until golden on all sides

Whisk the chopped fresh herbs, lemon juice, olive oil and salt and pepper in a small bowl to make the dressing.

Prepare the salad.  Mix the couscous, tomatoes, tofu, and cucumber in a large salad bowl.  Drizzle the dressing over and toss to combine.
