Key Lime Pie Bars Recipe

Healthy No-Bake 


Base Ingredients ½ cup packed pitted dates 1 cup almonds ½ cup shredded coconut

Prep Time: 40 Min  Chill Time:  3 Hrs


Filling  4 tbsp lime juice 1 cup canned coconut milk  2 tsp liquid stevia  2 tsp vanilla extract 3 tbsp melted coconut oil 2 cups raw cashews, soaked or boiled.

Pulse almonds in a food processor until well ground. You want a nice fine consistency

Step 1

Add dates and shredded coconut to the ground almonds

Step 2

Pulse ingredients until you have a sticky, grainy mixture. 

Step 3

Press base mixture evenly into an 8" square pan. 

Step 4

 Add softened cashews, lime juice, liquid stevia, vanilla, coconut oil and coconut milk to a food processor. 

Step 5

 Blend until completely smooth. 

Step 6

Pour the key lime filling over the prepared base, spreading it evenly.

Step 7

 Refrigerate for 3 hours or until completely set.

Step 8

 Cut the Key Lime Pie into squares and garnish with edible flowers, lime zest or fresh berries.

Step 9

 Keep for 3 days in the fridge or freeze for up to 3 months.
