Keto Pumpkin Spice Muffins

3 eggs ½ cup sweetener (erythritol or granulated monk fruit). ¼ cup melted butter 1 cup pumpkin puree 2 ½ cups almond flour 2 tsp baking powder 2 tsp vanilla extract 1 tsp ground cinnamon 1 tsp pumpkin spice

- Pre-heat oven to 350F | 176C   - Prepare a 12 muffins tray with 12 muffin liners.  - Set aside.

Step 1

Beat eggs in a large bowl

Step 2

Add pumpkin puree, vanilla extract, and melted butter. Whisk to combine.

Step 3

Add sweetener, baking powder, ground cinnamon, pumpkin spice, and mix

Step 4

Add almond flour and stir until well combined.

Step 5

Divide the batter into 12 muffins liners. Bake at 350F | 176C for 25 minutes until cooked. 

Step 6

Cool before serving

Optional Muffin Toppings

- Sprinkle with a mix - ½ tsp of cinnamon & 2 tbsp of granulated sweetener.  - Lightly brush with melted butter, then coat with cinnamon sugar.  - Drizzle with melted dark chocolate. - Top the muffins with crushed pecans before baking.
