3 eggs ½ cup sweetener (erythritol or granulated monk fruit). ¼ cup melted butter 1 cup pumpkin puree 2 ½ cups almond flour 2 tsp baking powder 2 tsp vanilla extract 1 tsp ground cinnamon 1 tsp pumpkin spice
Optional Muffin Toppings
- Sprinkle with a mix - ½ tsp of cinnamon & 2 tbsp of granulated sweetener. - Lightly brush with melted butter, then coat with cinnamon sugar. - Drizzle with melted dark chocolate. - Top the muffins with crushed pecans before baking.
