With Chocolate Cream Cheese Frosting

Keto Chocolate Cake

Cake Ingredients

-2 ¼ cup almond flour -¾ cup erythritol natural sugar alternative (or 1 ¼ cup granulated monk fruit or white sugar) -3 tbsp cacao powder -2 tsp baking powder -¼ tsp salt -2 tsp apple cider vinegar -5 eggs -¾ cup sunflower or canola oil -2 tsp vanilla extract

Cream Cheese Frosting Ingredients

-3.5 oz dark chocolate, melted and cooled -½ cup butter softened -¾ cup cream cheese -Liquid stevia to taste (replaceable with powdered sweetener)

Preheat the oven to 325F and line an 8" x 13" baking tray with parchment paper.

Step 1

Take 3 eggs and separate the whites from yolks. Set the whites aside. 

Step 2

Add the yolks, the two remaining eggs, oil, vanilla, baking powder, salt, and apple cider vinegar to a bowl.  Whisk to combine.

Step 3

Add granulated sweetener and cacao powder. Mix until combined.

Step 4

 Add almond flour and combine to make a stiff batter. 

Step 5

 Beat egg whites until stiff peaks form. 

Step 6

 Gently fold one third of the egg whites into the batter.

Step 7

 Gently fold the remaining egg white in until well combined. 

Step 8

 Pour the batter evenly into the prepared tray and bake for 15-20 minutes or until the centre of the cake is set.

Step 9

 Prepare the Cream Cheese Frosting - Beat butter, cream cheese and stevia. Adjust the sweetness to taste

Step 9

 Incorporate the melted chocolate and mix well. 

Step 10

 Frost the cooled cake using a piping bag or knife. 

Step 11

Refrigerate for 1 hour to let the frosting set.
