Finely chop walnuts in a food processor and set them aside.

Add the cream cheese and vanilla extract to a bowl and whip until well combined. 

Add the powdered sugar, lime juice, and lime zest and stir to combine.

Stir in the coconut, then add the ground walnuts and stir well to combine. 

Once well mixed, refrigerate for one hour, so the coconut can absorb the excess moisture.

Once it is chilled, roll it into 16 evenly sized balls. If the mix is still moist, add more coconut 

Coat each of the balls well in the additional coconut. 

Store in the fridge in an airtight container for up to 5 days.
