INGREDIENTS

Shred the chicken and finely dice the salad ingredients. Combine in a large bowl.

Combine the ingredients for the dressing.

Add the dressing to the chicken salad mix and combine well.  Chill in the fridge for around 30 minutes to 1 hour.

Evenly cut the crusts from the bread slices.  Do this in groups of two, so your sandwiches are even.

Lather the sandwiches with chicken salad and cut them in half to make tea sandwiches.
