Authentic Baba Ganoush Recipe

Ingredients

2 large eggplants 2 tsp ground cumin 1 garlic clove 1 tbsp lemon juice 1 tbsp olive oil 2 tbsp fresh chopped parsley ¼ cup tahini sauce

- Pre-heat oven to 425F | 220C  - Place eggplants on a baking tray and poke with a fork several times. 

Step 1

Bake for 40-50 minutes until the skin is wrinkled and the inside is tender.

Step 2

Let the eggplant cool. Cut them lengthwise and scoop the flesh out with a spoon or a knife.

Step 3

Leave the flesh to sit in a colander or sieve to allow excess moisture to drain 

Step 4

Place eggplant flesh in a food processor and add lemon juice. 

Step 5

Add cumin. 

Step 6

Add parsley. 

Step 7

Add garlic. 

Step 8

Add olive oil. 

Step 9

Quickly pulse until combined.  Don't over-process. 

Adjust Seasonings to taste

Suggested garnishes

- Sweet or smoked paprika, chilli, or cayenne pepper  -Sesame seeds - Crushed pistachio nuts or toasted pine nuts - Chopped cilantro or parsley - Pomegranate seeds  - Whole olives and fresh herbs
